Soljanka

We discovered Soljanka in the Spreewald, where it was on the menu everywhere. Something that has remained from the GDR.

Ingredients (for 4 persons)

  • 400g sausage
  • 2 onions
  • 2 peppers
  • 80g tomato concentrate
  • 3 pickled cucumbers and cucumber water
  • 1 tbsp sambal oelek / tabasco / other hot sauce
  • 1 bay leaf
  • 1l stock
  • 1 tsp mustard
  • 2 cloves of garlic
  • Sour cream

Accessories

  • Large saucepan
  • Measuring spoon
  • Cutting board

Preparation

  1. Cut the sausage and onions into small pieces and fry until the onions are translucent.
  2. Dice the peppers and add them with the tomato concentrate. Cut the garlic into small pieces and add it too, stir-fry a little.
  3. Cut the pickled cucumbers into small pieces and add them with some cucumber water and all the spices.
  4. Pour in the stock and simmer gently for 20 minutes.
  5. Serve with the Soljanka, some sour cream to stir in and bread.

Advice: You can prepare a little more Soljanka than you need, because it is supposed to taste even better warmed up.
